Last week, we celebrated Dr. Seuss' birthday with lots of fun activities to encourage fun reading! Reading is part of our core curriculum so we wanted to make this day as special as possible.
One of Dr. Seuss' most beloved book is called "Green Eggs and Ham". So as a special menu item, we featured green eggs and ham in our lunch! We used spinach extract to dye the egg & ham salad green.
